Potassium is a mineral, which needs to be monitored closely when suffering with and also recovering from an eating disorder. The main roles of potassium in the body are fluid and electrolyte balance, muscle function, nervous system function, heart health and blood pressure. Potassium can become dangerously low due to excessive exercise, poor dietary intake/food restriction, use of laxatives and vomiting.
Sources of potassium include apricots, banana, avocado, citrus fruit, dates milk, nuts and sunflower seeds.
To help top up potassium levels here is my banana and avocado smoothie recipes rich in potassium-containing foods!
Banana & Avocado Smoothie
- ½ avocado, diced
- 1 banana, frozen, diced
- 1 cup almond milk (or coconut water)
- 1 fresh date
- 1 handful ice-cubes, optional
- 1 tbsp. sunflower seeds
- Optional: ½ tbsp. cacao/dark cocoa powder
- Place all ingredients into a blender, blitz until well combined and pour into a glass, sprinkle with sunflower seeds, enjoy!
