Summer is a fantastic time to experiment with new salad creations. Everybody loves coleslaw but bottled dressings are not always the greatest option. The creamy asian salad dressing which I am about to share with you, uses only a few staples and is incredibly delicious! Try it as:
- a spicy twist to regular coleslaw
- on a simple spinach, tomato and sweet potato salad
- tossed through rice, chickpeas, cranberries, coriander and macadamia nuts
- a dipping sauce for rice paper rolls
Creamy Asian Salad Dressing
Makes 1 serve
Ingredients
2-3 tbsp. peanut butter
175mL coconut milk
juice of 1 fresh lime
dash of soy/tamari
pinch of chilli flakes
Method
Combine all ingredients in a food processor and blend until a dressing like consistency is reached, adjusting the flavours as necessary.
Store in a glass container in the fridge for up to 2 days. Enjoy!
